Leftovers?

Sandwiches all the way!

Having a little Thanksgiving fun today.  What do you like to do with leftover Turkey?   I saw Daniel has made some white turkey chili.  My favorite is a sandwich with dressing, turkey and cranberry sauce on some good white bread.

Suggestions?

My grandpa used to love cold turkey and grape jelly sandwiches, so much so that it's become a *thing* in our family. Leftover cranberry sauce sure makes for a great surrogate though!

I have to admit we usually do sandwiches but I think I want to come to Kent's house on Friday because that sounds amazing!!!!!

Usually just sandwiches, but I have made the turkey carcass gumbo from a recipe I got out of an Emeril Lagasse cook book & it was excellent!!

That sounds delicious. Is the recipe true to it's southern roots or is it a Northerner's version of it?

I did not know about Emeril before this post, thanks Terry, interesting guy. His last name is very common here (his dad was French Canadian), and so I half expected him to be Cajun from Louisiana (legacy of the Acadian deportation) or from New England where lots of French Canadian people established. Tuns out he's from Mass but mostly worked in New Orleans and actually opened his first restaurant in "norleans" I love that sometimes the world is such a small place.

We're not having turkey this year. I decided to go with a German Thanksgiving so we'll have roast pork tenderloin mit Jaeger sauce and mushrooms, spaetzle, sweet & sour red cabbage with bacon, sauteed Brussel sprouts, and baked acorn squash.

One of my favorite ways to deal with leftover turkey when we have is to make turkey curry and serve it over rice. Pretty good stuff!
