If kept in dark and cool and dry place, how long are green beans good for....years?
I think if they're stored well they will stay good indefinitly
Most experts say optimally one year, and two years is pushing it. I've never bought enough to go longer than about four months.

No idea, I have read that roasted beans start to decline about 1 week after roasting.

If kept in a dark and dry spot, indefinitely. But honestly, I've never kept them for more than a year.
Are you referring to canned green beans?
I would go with about a year, 2yrs pushing it. I supposed they might still be "good" in not making you sick for longer, but would not taste very good. I would check the can for any bulging, open carefully to see if any funn stuff on top of beans, and give it the smell test.
